Hamburguesas de Arroz y Lentejas

Esta es una bomba de energía, comenzarás la semana a full, además de recordar el clásico día lunes de legumbres que instituyeron las mamás. Esto es legumbre y cereal, una gran combinación para arrancar la semana, que no es pesada –como estarás pensando- y que resulta ideal para variar de la lenteja en sopa. La lenteja no tiene nada de grasa, pero sí mucha energía y, con el aporte crocante de un “vuelta y vuelta” en la sartén, descubrirás su mejor versión.

Ingredientes (4 personas)

  • 200 gr. de lentejas
  • 200 gr. de arroz Tucapel Gran Selección grado 2
  • 1 cebolla
  • 1 puerro
  • 1 cebollín
  • 1 zanahoria
  • 1 diente de ajo
  • salsa de tomate a gusto
  • 1 cucharada de salsa de soja
  • agua
  • aceite de oliva
  • sal
  • 1 hoja de laurel

Cocina durante30 a 35 minutos las lentejas junto a la cebolla, el puerro y el laurel, cubriéndolas apenas con agua. Las lentejas pudieron o no haber sido remojadas la noche anterior, la opción clásica es que sí, pero cierto pensamiento modernista dice que ya no es necesario… es tu elección.

Sazona con sal y pimienta. Cuando estén blanditas, escurre –guarda el caldo– y pica finito lo que quede de la cebolla y el puerro, mantén todo unido. El laurel lo puedes desechar o usarlo para decorar la fuente. Después pica el cebollín y la zanahoria, muy finos, y fríelos con un chorrito de aceite, agrega las lentejitas para que vayan absorbiendo ese sabor. Por otro lado, fríe el diente de ajo en otro poco de aceite, cuidando que no se queme, agrega el arroz, dora y vierte el doble de agua con sal a gusto. Cuece durante unos 16 minutos.

Ahora mezcla todo y con la ayuda de una cuchara ve uniendo hasta que quede consistente. Puedes agregar un poco de pan rallado si ves que no se arma. También está la posibilidad de que agregues un huevo para pegar, si fuera necesario. Forma las hamburguesitas mojándote las manos de tanto en tanto y fríelas en la sartén con un chorrito de aceite, 4  minutos por cada lado.

Dale un toque con la salsa de tomate: redúcela en una ollita con un poco del caldo de las lentejas, una pizca de azúcar, salsa de soja y si lo deseas, algo de crema, que agregarás fuera del fuego. Si quieres darle el toque maestro, cuando esté hirviendo fuerte, agrega un chorrito de vino blanco, será energético y gourmet. También puedes presentarlas como hamburguesas a la italiana, con palta-tomate-mayo; quizás con queso derritiéndose… o como más te guste!
